Recipe for Sweet Potato Protein Pancakes
Two ways and two recipes to make delicious sweet potato protein pancakes. One fluffy, one flat, but both AMAZING!
In a moment of desperation to lose weight, and an on again-off again obsession with the fitness world, I paid good money for a weight loss meal plan. Although I didn’t lose much weight, I did get some great recipes! It was more than 10 years ago, and I can not find that meal plan or recipes anywhere. But, I remember it had sweet potato protein pancakes, and I remember loving them. I have scoured my files, my hard drive, and even the internet, and have not been able to find that recipe anywhere. So, I’ve been testing other sweet potato protein pancake recipes, and although I still haven’t found the original, I’ve created my own final two recipes that I think are the closest.
These two final recipes are both pretty tasty, and not that different in texture. But the flatter ones have equal protein to carbs because I used protein powder. The fluffier ones have more carbs because I used oats.
They are both worth trying, depending on your day, so I included them both!
Sweet Potato Protein Pancakes – with Protein Powder

Sweet Potato Protein Pancakes
Ingredients
- 1/3 cup sweet potato, cooked
- 1 large egg
- 1 scoop vanilla protein powder
- 1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
Instructions
- Put all ingredients in a blender, and blend thoroughly until smooth.
- Pour 1/4 cup batter onto a skillet and grill till cooked through as much as possible.
- Top with greek yogurt, nuts, syrup, chocolate, berries, whatever!

Sweet Potato Oat Pancakes
Ingredients
- 1/2 cup cooked sweet potato
- 1/2 cup egg whites
- 1/2 cup dry oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
Instructions
- Blend all ingredients thoroughly in a blender until smooth.
- Pour 1/4 cup batter onto a skillet and grill till cooked through as much as possible.
- Top with greek yogurt, nuts, syrup, chocolate, berries, whatever!
Nutrition
Both pancakes take more time on the skillet than typical pancakes. The cooked sweet potato makes the pancakes pretty wet, and therefore will feel like it’s undone for a very long time. I plan to leave my pancakes on the skillet at a low heat for as long as it takes. Sometimes, it’s 10 minutes!
But, if you are patient, they will cook through and hopefully you’ll be thrilled with the result as much as I was. It took me awhile to get used to the texture, but I really like them now.
