This recipe only Makes 4 Standard Size Muffins. You can double it or triple it, of course… but with my house size shrinking, I usually end up eating ALL the muffins. So, it’s just easier for me to bake in smaller batches these days! LOL

99 Calorie Healthy Carrot Muffins
Ingredients
- 1 large egg
- 1/4 cup mashed banana
- 1/4 cup shredded carrots
- 1/4 cup Nonfat Plain Greek Yogurt
- 2 tablespoon Golden Monk Sugar
- 1/4 cup self-rising flour
- 1 teaspoon pumpkin pie spice
FROSTING
- 4 tablespoons light cream cheese spread
- 4 tablespoons zero calorie powdered sweetener
Instructions
- Mix egg, banana, carrot, sugar, and Greek yogurt in a mixing bowl till well blended.
- Fold in pumpkin pie spice and self rising flour.
- Grease 4 silicon muffin cups. Fill equally with batter.
- Bake at 350 for 15-20 minutes, or until a knife comes out clean.
- While it's baking, mix the cream cheese and zero calorie powdered sugar together. Add to a piping bag, and pipe your frosting on top of cooled muffins.

I’m curious about the calories? The macros add up to 152 calories per muffin. What was omitted? I know some people omit fiber calories.
Ah! Yeah . You are right and normally I would never count net carbs. But for this, I did use the label as written for monk sugar which shows zero calories on the label but 4 g carbs per teaspoon I think.
So, it’s the monk sugar. If you use a true zero calorie sugar, the carbs will go down.
After thirty minutes these were still wet inside and rubber. So sad to waste ingredients on these.
