At Health Beet, I want to help you reach your weight loss goals, while eating DELICIOUS food! What better way to eat delicious food and stay healthy than with this Pistachio Protein Ice Cream.

To make this protein Ice cream, I used:

  • Sugar free pistachio pudding mix. I use this a lot, because it’s sugar free, only 25 calories per tablespoon, and makes EVERYTHING taste better (IMO)! I regularly stir it into nonfat plain greek yogurt, I add it to pancakes, cottage cheese, creamy desserts, and today, I am adding it to this ice cream.
  • Second, I used a scoop of protein powder. For Vanilla Protein powder I usually go with the Optimum Nutrition I can get at Costco. It’s 120 calories per scoop, and it’s pretty versatile. Plus, it consistently gets good ratings on my protein powder taste tests!
  • And lastly, a frozen banana! Keep these in the freezer and you can make protein ice cream in under 5 minutes. Plus, the banana adds a balance of carbs to compliment the protein, keeping you full longer.

The most important aspect of making protein ice cream is that you must use a food processor. Because there is no liquid, a blender does not work! You can get one for under $50 and they last forever!

Instructions

  • Blend all ingredients in a high powered food processor. This does not work in a blender.
  • Top with whipped cream and one crushed pistachio.

    Great flavor absolutely loved it. The first time I made it was off and wanted to share my mistake. The protein powder I had was 40g β€œper scoop” where as the ON whey is 30-31g. My assumption was a scoop was the same. Once I adjusted it came together great. Thank you Amy!

    1. Yes! Thank you for noticing that. I need to add it. I even recently got a protein powder that was half the size of normal (15grams per scoop!)
      So, I will definitely start using grams!!
