Why you should try this quick Pineapple chicken
If you are trying to eat lean foods, chicken is a great source of protein. I love eating chicken, but it can get boring unless you find different seasonings, marinades, or sauces to cook it with. That’s why I decided to create this sweet, quick pineapple chicken!
This is a simple meal to make that uses ingredients you probably already have lying around. I like to serve my pineapple chicken with broccoli and pineapple. These are low calorie additions to the meal that are filling and tasty! If you don’t have broccoli or pineapple, never fear. There are all kinds of other healthy side dishes you can pair with your main dish. I just try to have a fruit or veggie with each meal to support My Plate. Other sides you could try include asparagus, fruit kebabs, or one of these 9 grilled chicken salads.

Quick Low Calorie Pineapple Chicken Recipe
Ingredients
- 1 lb chicken thighs boneless, skinless
- 1 ounce soy sauce
- 1 ounce pineapple juice
- 1 ounce honey
- 1 clove garlic
- 1 pinch ground ginger
- salt and pepper to taste
Instructions
- Heat skillet to medium high and coat with olive oil. Once skillet is hot, add chicken thighs to sear. Do not crowd them (they won't stay dry enough to get a dry sear). Don't move them until you get the sear. Cook on both sides, about 3-4 minutes each.
- Once almost cooked through, pour into your skillet a mixture of soy sauce, pineapple juice, honey, garlic and a pinch of ground ginger.
- Let chicken cook in sauce until sauce reduces by half, 3-4 minutes. Remove from heat and serve with pineapple and broccoli.
