Flavoring these Cottage Cheese Pancakes

The original low calorie recipe for pancakes that I shared was this pancake recipe that I got from my first Body For Life book. The biggest complaint people have about it is that there isn’t enough flavor.

That doesn’t bother me because I use healthy pancakes as a vehicle for all my flavor toppings, like fruit, syrup, and of course whipped cream.

However, a recent comment on the first low calorie pancake recipe said she wanted to try the pancake recipe, but add sugar free pistachio pudding mix! That’s the first time I started thinking about ALL the different ways you could possibly flavor these pancakes.

And then, wandering through the baking aisle, and looking at the extracts, I saw McCormick had STRAWBERRY EXTRACT! So, I bought some and used it in this recipe.

Extracts and low calorie flavorings are the perfect solution. I’ve been trying to add berries to my cottage cheese pancake recipe unsuccessfully. Every time I even add one or two berries, the pancakes take forever to cook through, and even when I think it’s cooked, the middle tends to be wet still.

Oatmeal Cottage Cheese Pancakes Recipe with Strawberry!

These low calorie pancakes are made with just three main ingredients. Cottage cheese, egg whites, and oats. Adding some flavorings like strawberry extract make them extra tasty!

Ingredients

Optional

  • 1 tablespoon whipped cream
  • 4-10 small strawberries

Instructions

  • Blend cottage cheese, egg whites and oats in a blender.
  • Pour 1/4 cup at a time onto a hot, non-stick skillet, over medium heat. Cook on both sides.
  • Remove cooked pancakes from skillet. Top with strawberries and whipped cream.
