If you need a jumbo cookie, that’s healthy enough for breakfast, let me share this DELICIOUS breakfast cookie. It’s made with a very ripe banana, dry oats, and a tiny bit of peanut butter to really bring out the flavor. Add some chocolate chips into it, and you have a breakfast that tastes as good as dessert. (and I love dessert for breakfast!)
You can make it ahead of time, wrap and freeze for future snacks.
Ingredients
- 1 medium banana ripe
- 1.5 teaspoon peanut butter
- 1/4 teaspoon vanilla extract
- 1/2 cup quick oats
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1 tablespoon mini semi sweet chocolate chips or dark
Instructions
- Preheat the oven to 350 degrees. Line a small baking sheet with parchment paper and set aside.
- In a small bowl,mash banana with peanut butter and vanilla extract. Mix the oats,baking powder and ground cinnamon together and mix it with the mash banana. Pour the batter on to the parchment paper, and using a fork create a jumbo cookie shape. (don’t make it too flat). Decorate the top with chocolate chips gently pressing them to set.
- Bake for about 16 to 18 minutes on the middle rack. Let it cool. Divide into 8 slices.
- You can make it ahead of time, wrap and freeze for future snacks.
