I have been eating eggs every single morning, for the better part of a year. I feel like it fills me up in the morning, helps me get a huge post workout dose of protein, and I think they taste AMAZING! It’s highly satisfying.
So, of course, I am always looking for ways to put variety into my eggs for breakfast.
I’ve written many recipes using eggs. Some of my go-to favorites right now though are:
Recently, my sister was complaining about how her breakfast was so high in calories because she wanted to include scrambled eggs every day.
It didn’t even occur to her to dilute her whole eggs with egg whites, to bring the volume up, and the calories down! At only 70 calories per egg (or 15 calories per egg white), eggs are perfect for someone on a weight loss journey, or who is counting calories.
Another way to bring the volume up and calories down is by including veggies! That’s where this low carb omelette loaf comes in.
For this omelette casserole loaf, the ingredients I chose to use:
- Part eggs, and part egg whites. I used 8 medium eggs, knowing I was going to slice the finished casserole into 8 equal, one inch slices. Then, to give more volume, I used a full cup of egg whites. Whole Eggs are rich in fat soluble vitamins like A, K, D, and E.
- Second, I used veggies! You can get creative with the veggies you use here. I like using fresh spinach in eggs, mostly because the color! I love a colorful meal, and it means you’re getting a variety of antioxidants. Antioxidants in spinach help to fight the damage of free radicals.
- I also added tomato, another food rich in antioxidants.
- Then, finally, I included some fat free cheddar (I find it at Walmart). This keeps the calories low, but makes the omelette loaf taste so good!
How to make this Egg Casserole
After you choose your veggies, and have all your ingredients, All you need to do is whisk it altogether in a 10 inch loaf pan. Then, top it with your cheese and bake it.
You’ll want to bake it for almost an hour, or until a knife comes out clean!

Low Carb Omelette Breakfast Casserole Loaf
- 8 medium eggs
- 1 cup liquid egg whites
- 1 medium tomato chopped
- 1 cup baby spinach leaves
- 1/2 cup fat free cheddar cheese
- Whisk all ingredients together except the cheese.
- Spray a bread pan (9.5 inch) with nonstick cooking spray.
- Pour eggs into the pan. Top with cheese.
- Bake at 350 for 45-60 minutes, or until knife comes out clean.
- Cut into 1 inch slices.
