3 Layer Protein Ice Cream Cake

This Neapolitan style protein ice cream cake is 3 layers of healthy dessert, all in one. This healthy treat has a layer of strawberry protein ice cream, a layer of vanilla protein ice cream and a low calorie, protein brownie crust!

For 1/6th the cake: 99 calories, 10 g protein, 22 g carbs, 2 g fat

You guys!! 3 Layers of protein dessert, all in one!

With it being summer, I decided to make a new protein ice cream treat that would be the perfect cool down on a hot day. And this is what I cam up with! 3 layer Neapolitan ice cream cake that is high in protein, low in calories, and so yummy!

Disclaimer: Since you have to freeze each of the layers, this is definitely the kind of treat you’ll want to make ahead. And if you need a quicker recipe, check out my other protein ice cream recipes. Most of them can be made in 5 minutes!

Now, on to the recipe.

Ice Cream Cake Layers

There are 3 layers to this cake, brownie, strawberry, and vanilla. Of course you could always swap out any of these flavors and replace it with your own recipe. Just remember that the nutrition facts will change with any substitutions!

Brownie Layer

🍫1 Brownie layer:🍫
✔️For this I used one recipe for “ridiculous brownies” pinned to the top of @lowcalrecipes98 Instagram page. 

After mixing, I poured into the bottom of a 6 inch springform pan and baked it. Once it was out of the oven, I put it in the freezer till solid.

Strawberry Layer

🍓The next morning, I made my protein strawberry layer: 🍓
✔️strawberry protein powder
✔️frozen strawberries
✔️vanilla unsweetened almond milk

Blend the strawberry protein layer in a blender until smooth and pour over the frozen brownie in the spring form pan.

Vanilla Layer

🍦A few hours later, I made the Vanilla layer🍦
✔️ vanilla protein powder
✔️ frozen banana
✔️ vanilla unsweetened almond milk 
Blend in a high powdered blender, and pour over the frozen strawberry layer.

Freeze one last time until solid. When ready to remove from pan, set out on counter for about 10 minutes. Release the clasp on the spring form pan and remove the layered protein ice cream cake.

Cut into 6 slices and enjoy!

Instructions

Brownie Crust Layer

  • Follow directions on the IG link for the low calorie protein brownie.

Strawberry Layer

  • Mix together the strawberry protein powder, frozen berries, and almond milk
  • Blend the mixture in a blender until smooth and pour over the frozen brownie in the spring form pan.
  • Freeze for 1-2 hours (until hardened)

Vanilla Layer

  • Mix together the vanilla protein powder, banana, and almond milk
  • Blend the mixture in a blender until smooth and pour over the strawberry layer in the spring form pan.
  • Freeze and then serve!
