There’s no question when you need a quick lunch, that a simple tortilla made into a pizza just hits the spot! And this is my favorite combo these days: BBQ CHICKEN with PROVOLONE cheese.
Not only is this quick lunch low in calories, but it’s also high in protein and full of flavor.
Two Tips if you’re making BBQ chicken tortilla pizza
- Choose your favorite low calorie tortilla. Right now, even though I LOVE a good low carb tortilla, for practicality, price, and my families sake, I usually buy the 80 calorie Maya’s tortillas. (Here’s my full best low calorie tortilla review here)
- And second, ALWAYS have brined, and cooked chicken on hand. That’s the only way this dish is truly under 5 minutes to make. Quick and Easy BBQ Chicken Tortilla Pizza
Ingredients
- 1 maya tortilla (80 calorie ones)
- 2 ounces chicken tenderloins cooked
- 1 slice red onion chopped
- 1 small mushroom chopped
- 2 tablespoons sugar free BBQ Sauce
- 1 teaspoon chopped parsley
- 2 slices Sargento brand thin sliced provolone cheese
Instructions
- Preheat oven to 400 degrees.
- On a cookie sheet, lay out your tortilla. Top with 2 tablespoons BBQ sauce.
- Top the BBQ sauce with 3/4 ounce or 2 thin slices of provolone cheese, mushroom, red onion, and parsley.
- Bake for 3-4 minutes (*depending on how close your rack is to the heating element.). When I placed my rack to the top, this only took 2 minutes.
- Once tortilla starts to get crispy and cheese melts, remove from oven and eat!
